Cajun Chicken and Loaded Baked Potato Soup

True to Cajun style, this soup has a delicious kick to it, while the potato adds that wonderful umami flavor for a satisfying bowl of soup that tastes like it has simmered all day. Toss all the ingredients into a heavy saucepan and set the timer for 15 minutes to YUM!

  1. Bring 8 cups of water to a boil in a heavy saucepan.
  2. Add ingredients to water, stirring well.
  3. Reduce heat to low and simmer for 15 minutes, stirring occasionally
  4. Let rest for 5 to 10 minutes to thicken slightly.
  5. Add in Olive Oil and heavy cream. (Optional)
